Makin' Due

Last week I told you about the hail damage we had that destroyed most of our gardening efforts of the year.  Well, we have to make due with what we've been given so... with the split cabbages ~
 we made sauerkraut !  
 Our damaged cucumbers, what we could salvage, we made
cucumber salads, 
 pickles, and relishes.
 The apples were knocked to the ground from every tree, so
we made applesauce, frozen apple slices and juice for jelly.
 The tomatoes, peppers and onion tops were badly damaged.
Make spaghetti sauce !
 And tho this next picture is from last year, with a perfect squash,
this years squash got ' squashed.'  So did the pumpkins, but 
' No Worries.'
Make PIE !!!
 So many times in my lifetime, as a child and still today,  I've heard it over and over again...
" Make due with what you have. "  
I've heard those words out of my parents mouths so much
that, I know they knew it from experience.
They have taught me well and I so appreciate the childhood and 
life I had as a country girl.
As for today and the rest of my life,
I will always be a country kid, even in my Sept. years.

I think everyone can see through the blog you definitely had good teachers, good teachers are not effective without good students. I know you were not always paying attention(no one does), but in the long run YOU were a great student. Beautiful. You remind me of the old saying, If life delivers lemons, make lemonade. YOu have. That canning and salvage is beautiful, works of art.

I heard that as well "make do" - another one was "if you don't have cash, don't buy it..." Your canning looks so good - and oh my the pie!

You had and have great parents that taught you right - MAKE DO WITH WHAT YOU HAVE - I wish I had told my kids that.

I've heard "make do" all my life as well. It serves us well I think. We are resourceful and able to move forward from problems that might hold other back from sucdeeding. Good job "making do"!

I really enjoyed this post, I was wondering how you all made it with the hail damaged vegetables. You must've worked your heinies off getting stuff saved and preserved before it all ruined. I applaud you.
Your parents sound like great folks with good solid advice that is still as valid today as back then. :)

So glad to see you could salvage some of your hard work Sis. Same here, tomatoes are picked and ripening, cukes are pickled, carrots dug and will be canned tomorrow along with the beets. Spuds still need digging then we can call it quits till spring!
