Oatmeal Cho. Bars, Deer, Sunday Sunset

There has been requests for this recipe that I got from Mel years ago. It has no calories, LOL, and has to be eaten with care due to it's gooey chocolate center and chewy crust and topping. I call this:
Mel's Oatmeal Chocolate Bars

Save 1/2 of crust mix for the topping.

Crust Mix: Blend together until smooth;
1 C. butter
2 C. brown sugar
2 eggs
1 tsp. vanilla
2 1/2 C. flour
1 tsp. baking soda
1 tsp. salt
1 1/2 C. oatmeal

Filling: Heat together until melted;
1 can sweetened condensed milk
1 bag chocolate chips
2 Tblsp. butter
1/2 C. chopped nuts, pecans or walnuts

Press 1/2 crust mixture into bottom of 9x13 greased pan.
Spread with melted chocolate filling.
Top with remaining 1/2 crust mixture.
Bake in preheated 350 degree oven for 25-30 minutes or until done in center.
Eat at your own risk! These gooey, chewy dessert bars will disappear in a hurry. Do enjoy every morsel.

After our long weekend in the woods making more firewood, enough for two winters and the cabin, our joints are screaming at us. It's a good 'scream' tho. We have accomplished something worthwhile and are guaranteed to stay warm this winter. Now that was so worth 'Woodsman Church' this morning with a choir of robins, sparrows, chickadees and an eagle, accompanied by the wind whistling through the treetops and the creek rippling over the rocks.
We were invited to lunch at our sons new apartment. He and his family made a fine meal of Chicken Stir Fry. Andy sure is a good cook. And their 3 boys are sure growing like weeds. Funny how much they change when you don't see them every day. The boys had to show us their new bunkbeds and show us some tricks, play some games and just giggle. It was a fine afternoon with family. Life is so good.

Just as the Sunday Sun was setting in it's rainbow of colors, 7 deer were playing chase and grazing in our field. It was good to see more than one for a change. I see venison stew and grilled loins this fall. Life is so good.

Great looking results from the recipes, Dar. Too, I enjoyed the pictures of the deer! I'm a hunter. Not much of a killer...but love to hunt. I have a friend who keeps me supplied with deer-burgers and steaks. Frances knows how to cook it so that those who say they don't like it will eat it and love it.

The bars look so yummy! I have to say that your dump cake was a hit here so I can imagine that these would be too. Actually anything with chocolate usually is! The deer look yummy too. My hubby is the hunter here. I am totally hooked on bear and buffalo meat now. I want him to get a water buffalo this year too. Little different than regular buffalo, but not much. He would drool over the deer though.

Dar nothing could be better than eating your sweet desert and watching deer play!
I'm on a reducing diet and my main no no is sweets!!I can look and imagine the wonderful taste!

Your oatmeal gooey bars look wonderful! I love cookies that can be baked in one pan and then cut into squares later! I will have to try these when my son gets home from college.

Hi Dar....boy does that low cal chocolate bar recipe sound so sweet LOLOL...and I will be going to the store for the ingredients..probably will get a double LOL..I don't think they will last long around here either...and that picture of the deer..awesome to look out from your own house and see something like that...for this city girl..amazing is all I can say!!! enjoy to the fullest...God Bless...hugs...Ora in KY

Wow! Now that's my favorite type recipe... "gooey & chewy" Sounds like a fun sweet treat.

I agree, children seem to sprout up and change so quickly. It's bittersweet. It sounds like a lovely family visit. Sweet!

The deers are great. There's something majestic and enchanting about seeing deers nearby. Love it!

Glad you got to see your son in his new apartment and his family. Family is just so important. One of my sons is coming to see me on Mother's Day. I'l THRILLED.

YAY!!! Another yummy recipe! Thanks so much for posting it, Dar. I won't have a chance to make them before we leave for Maine on Thursday (gonna go spoil those two little granddaughters rotten!), but will surely be making them when we get back! SO glad there are no calories involved! lol

My hubby has our winter's supply of firewood cut, split and stacked for drying this summer, too. We were blessed by a close friend of ours who wanted to get some trees cut down around his house...a lot of trees, actually. He told Strong Heart that if he'd help him, there would be firewood a plenty for us...and he wasn't kidding. God is so good.

Glad you had a nice visit with your son and his family yesterday afternoon. Sounds like your grands enjoyed your company as well! ~wink~
